28 Day Diet Plan Salad Recipes

Healthy Bitch Leafy Greens Salad

1 large leaf of swiss chard
10 baby spinach leaves
1 scallion stalk
chop into bite size pieces
toss healthy salad with dressing – shake dressing well before adding to salad
1 tbsp olive oil, 1 tbsp rice vinegar, 1 tsp flax seed oil, 1 tsp tamri soy sauce, 1 tsp raw sugar
add healthy crunchy salad topping – toss and serve
1 fist full of pumpkin seeds, 1 tsp of sesame seeds, 1 fist full of rice noodles or sesame noodles

Healthy Bitch Bok Choy Salad

3 large Bok Choy Stalks
1/2 Scallion Stalk
chop into bite size pieces
toss healthy salad with dressing – shake dressing well before adding to salad
1 tbsp olive oil, 1 tbsp rice vinegar, 1 tsp toasted sesame seed oil, 1 tsp tamri soy sauce, 2 tsp raw sugar
add healthy crunchy salad topping – toss and serve
1 fist full of sliced almonds, 1 fist full of crunchy rice noodles, 1 tsp sesame seeds

Healthy Bitch Spinach Salad

20 baby spinach leaves
chop into bite size pieces
1 green apple – peel and chop
1 fist full of dried cranberries, 1 fist full of sliced almonds
toss healthy salad with dressing
2 tbsp of red wine vinegar, 2 tbsp of olive oil, sprinkle sea salt, 1 tsp raw sugar

Healthy Bitch Veggie Salad

3 leaves of romaine lettuce
2 white mushrooms
1 carrot stalk
1/2 scallion stalk
chop into bite size pieces
toss healthy salad with dressing
2 tbsp of red wine vinegar, 2 tbsp of olive oil, sprinkle sea salt, 1 tsp raw sugar

  • two organic sweet potatoes
  • two organic red potatoes
  • half of an oragnic sweet onion
  • one box of organic seven whole grain rice
    Seeds of Change is a great brand for organic rice.
  • two organic red peppers
  • two organic orange peppers

Organic Cooking Directions

preheat oven 400 degrees
cut tops out from peppers and clean seeds out from the peppers, when peppers are clean place in pot of boiling water this will help soften and shorten cooking time, let sit in water for about fifteen minutes while preparing stuffing then place in glass pan sitting upright till stuffing ready

You can boil or steam potatoes then mash potatoes in bowl, chop onion and add to rice while cooking, cook rice as specified on box, when rice is finished cooking add rice to mashed potatoes and mix with spoon

Once stuffing is complete them you can take stuff peppers with mix, don’t be afraid to stuff peppers to the top. You can place pepper tops back on top to keep stuffing in tack. Pour two cups of water in glass pan to prevent burning. Place in oven and cook for about fifteen minutes remove tops of peppers and broil so tops are is crispy for about five minutes.

one bag of organic green grapes
milk from one organic coconut
Juice pineapple and grapes then add milk from the coconut.
Trust me you wont need any alcohol to get a rush from this delicious fresh squeezed juice.

5 stalks of celery
5 russet potatoes
1 sweet onion (chop really tiny)
1 box of low sodium vegetable broth (Pacific Foods)
3 cups of water

chop all vegetables into bit size pieces
sprinkle sea salt to taste, sprinkle garlic powder to taste
cook on stovetop low to medium temperature

Cooking Time: approximately 60 minutes (till vegetables are tender) Enjoy this low calorie hearty healthy soup!

1 acorn squash cut in half and toss and scoop out inside seeds
3 apples cut in cubes and place in Steam and Fresh Zip lock bag
1 package of Light Life “sausage” vegetarian sausage cut into quarters

preheat oven 350
bake acorn squash upside down in glass pan with 2 cups of water for about 45 minutes or until you can poke a fork into side of squash easily
sprinkle cinnamon, nutmeg, allspice and a tbs. of brown sugar on apples and steam in bag for 3 minutes
pan fry vegetarian sausage with olive oil until golden brown
when acorn squash is cooked remove from oven place on plate and stuff with baked apples then sprinkle a little sea salt, place vegetarian sausage along side acorn squash and Enjoy a healthy Vegan meal from me, The Healthy Bitch!
